The organic Farm

Cerretino property covers more than 20 hectares of land partially cultivated, partially covered by woods and partially dedicated to the pasturage.
The seeds, the vineyard, the olive grove and the vegetable garden are cultivated in compliance with the organic farming methods and in the respect of the very ancient farming traditions: slightly deep tillage, organic fertilizing using our animals manure or green manure leguminous plants, use of natural products, as sulphur and copper, respect of season cycles, of the shifts, of pruning and of fields laying fallow.
The Farmhouse slow rhythms are still today marked by the nature and its production cycles: the sowing, the vegetable garden production, the threshing, the grape harvest, olives hand-picking. All the fruits given by the land every year are obtained thanks to the combination of manual production methods and modern techniques able to ensure high quality and genuine products.
The wheat, barley, corn, sunflowers, fodders (medical herb and clover) are used in our farmhouse as food for our animals; the oil, wine, “Vin Santo” wine and the vegetables are, on the contrary, used in the Inn and can be bought by our guests.

In our about 1 hectare vegetable garden we use an organic farming respecting the lunar calendar and grow different kinds of vegetables and officinal plants, which are used in the Inn for the preparation of tasty dishes and rich menus suitable for vegetarian cuisine lovers (salads, tomatoes, carrots, peppers, courgettes, aubergines, broad beans, beans, peas, cabbages, potatoes, garlic, onions, celery, etc.)

The wood is mainly constituted by forest trees: oaks, maples, hornbeams, chestnuts and other broad-leaved plants. This is the kingdom of mushrooms, truffles and chestnuts which are picked up during Autumn to be served in the Inn. From the wood we obtain also the wood necessary to the Farmhouse use, with a particular attention to the cut. In winter the wood is given to our guests to be used in the apartments fire places.

At Cerretino we breed poultry (gooses, chicken, ducks, guinea fowls, turkeys, pigeons) and sheep producing wools and lambs.
The animals stay in a wide shadowy pen, in the middle of a little wood close to the farmhouse buildings, which protect them against foxes, badgers, porcupines, stone martens incursions.
They are all fed with organic poultry feed produced in the farm and have wide spaces for pasturing.
Their meats are used for tasty roasts and casseroles.
We have also 10 beehives of very active bees under the olive groves shadow, giving us their tasty honey, which is served to our Farmhouse guests for breakfast.

It is possible to buy in the Farmhouse our organic products to taste at home the same genuine flavour you have tried during your holiday by us.
